Look no more, cause I am going to give you the simplest and easy chicken recipe that you can make without onion and tomatoes. It is a must-have recipe for bachelors, students, parties, etc.

I named this dish Kashmiri cause the main ingredient is dry Kashmiri red chillis. You can use other red chillis if you want.

You can enjoy this finger-licking bhuna chicken recipe with naan, roti, rumali roti or rice.

What is bhuna chicken?

A semi-hot dry curry, in which masala curry is stick to the chicken pieces or in short it is a thick gravy dish. In this method, we cook the chicken in oil and spices in medium to high heat by regularly fishing the chicken with a spatula so the masala does not get burn. We do this until the chicken is cooked 70%.

Friends, just cook it and serve it. No one will make out that how this chicken is made with just minimal ingredients.

Bhuna chicken recipe:

Ingredients:
250 g chicken.
1-1/2 tsp salt (as per taste).
2 tsp roasted or regular cumin powder.
1/2 tsp turmeric powder.
1-inch ginger.
4 garlic cloves.
2 tablespoon mustard oil.
Half cut coriander leaves for garnishing.

For marinade:
1 cup or 150 g curd.
5-6 Kashmiri red chillis (deseed them to reduce the heat).
2-3 cloves.
4-5 black peppercorns.
1/2 inch cinnamon stick.
1 medium bay leaf.

Instructions:
1. Wash the chicken thoroughly and keep aside.

2. Take a pan with 1 cup of water and boil the red chilies for 1-2 minutes. Do now throw the water away, it can be used while cooking chicken.

3. Take a mixer grinder jar and put the chilies, cloves, peppercorns, cinnamon stick, ginger, garlic and bay leaf. Put some curd or water to make a fine red paste.

4. Take the bowl, put the chicken, turmeric powder, cumin powder, and the paste. Mix them thoroughly and put aside for at least 30-40 minutes (the longer the better).

5. Now take a pan heat it and pour oil, vaporizing the raw smell of the oil by putting the flame high. (at smoking point turn off the flame for a minuted and then re-ignite it and put the flame medium).

6. Now carefully put the chicken pieces one by one. Put the flame high and cook the chicken till the curd dries or the oil comes up (do not forget to continuously stir). This will take around 8-10 minutes.

7. Now put the flame in medium and put rest of the curd masala in the pan and mix it thoroughly. Also, put some coriander leaves now.

8. Now, cover and cook for 10-15 minutes (stir in between). If spices start to get stick at the bottom, pour some water to avoid burning.

Note: Serve hot with chapatis or naan or rice. You can use other red chillis such as Guntur red chili or Byadgi chili.

3. Put Kashmiri red chillis, cloves, black peppercorns, cinnamon stick and bay leaf in a blender and blend it with little water or curd.

4. Now place the blended mix and curd in a chicken bowl and mix with hand and set aside for 30-40 minutes.

5. Take mustard oil in pan and heat at high flame, then lower the flame when the smoke starts coming out of the pan. Put the flame in medium heat and place the chicken pieces one-by-one carefully and stir fry until the oil oozes out.

6. Then pour rest of the paste in the pan and cook for 2-3 minutes continuously stirring. Then cover the pan with a lid and cook for 10 to 15 minutes until the chicken cooks and finally garnish it with garam masala (optional) and coriander leaves.
