You have come to the right place. I have always enjoyed this accompaniment since childhood. I have enjoyed every dish with these red and cute looking vinegar onions.

It is too easy to make and believe me after making at home you won't be eating again at restaurants anymore.

This tangy companion is thoroughly enjoyed in India from North to South. Some call it sirke wale pyaaz or onion vinegar or onion pickle.

Its crunchiness and tanginess dipped in vinegar make it an all-rounder item which can be enjoyed along with veg and non-veg dishes or even plain rotis or chapatis.

Is pickled onion vinegar good for you?

Well, if you put onion and vinegar benefits separately and combine them, you get the benefits. Onion with vinegar does not kill the key benefits of onions.

Onion vinegar recipe

Ingredients:
15-20 onions.
Half medium-sized beetroot.
3-4 cloves.
4-5 black peppercorns.
2 tsp sugar.
2 tsp salt.
1 cup or 200 mL of water.
1 cup or 200 mL vinegar.

Instructions:
1. Put gashes or slice onions halfway.
2. Pour water in a pan and heat it.
3. Put sliced beetroots, cloves, peppercorns, sugar, salt and boil for a minute. Cool the water.
4. Take a glass jar and put onions, then pour the solution and pour 1 cup of white vinegar.
5. Keep it in the fridge for at least 24 hours.

Note: When they are ready, take out the jar and spoon out onions as per your requirement and close the jar and put back in the fridge. After using all the vinegar onions you can reuse the vinegar solution and fill it again with the next batch of onions. Reuse only 2-3 times.

How to make onion vinegar?

1. Take 15 to 20 onions. You can buy from a vegetable vendor or any grocery store. Peel them and wash them and soak them.

2. Make gashes with the help of the knife halfway, do not cut them in half.

3. Now take a pan and pour 1 cup of water (200 mL) and bring it to boiling point and then lower the flame.

4. Now place beetroot (sliced into small pieces), 3-4 cloves, 4-5 black peppercorns, 2 tsp sugar and 2 tsp salt (you can also put cucumber, slit green chilies as per your choice) in the pan. Boil it for 1 minute and take the pan down. Water will become red due to beetroot.

5. Cool the water in room temperature. Now take a glass jar and put the onions in it. Fill it with the cooled beetroot water (you can stain the water if you like). Pour 1 cup of white vinegar. Close and keep it in the refrigerator for at least 24 hours.

6. Your sirke wale pyaaz is ready, enjoy it with a meal. You can keep them in the fridge for 8-10 days.

7. Do not throw the vinegar solution, put again onions and use again.
